Year to year mother nature dictates if and when we are able to attain an ice wine and press the grapes frozen. Following the hand picking at below -8 degrees and pressing, the juice was inoculated with specially selected yeasts. The frozen grapes had harvest sugar of 39 brix and were fermented slowly to 10.5% alcohol. Using Charmat method enabled us to create this Frizzante style Icewine.
