About: smooth, elegant tannins
This vintage we co-fermented Viognier skins with our Syrah. The result is a fuller, richer palate and the addition of a subtle floral note to the aroma of the wine. Handpicked and sorted, this wine was destemmed and partially crushed. The must was transferred into open lid fermentation bins and they were inoculated with a few selected yeast cultures. The wine received a minimum of three punch-downs a day to ensure good extraction of color and tannins. This wine was aged for 11 months in 75% French oak and 25% in American oak. 50% of the barrels were new oak and the balance was in 2-4 years old.
