This full-bodied white was a fun project Paul and Richard wanted to try back in 2017 using a portion of our Grenache grapes.
Hand harvested. After whole cluster pressing, the juice was fermented in new French oak barriques. After fermentation, the wine was transferred to 1-year old French oak for 14 months.
Aroma: blueberries, red raspberry with subtle notes of herbs and toasted oak
Palate: rich & savory, dark cherry, blackberry and plum flavors
About: medium-full bodied, balanced acidity and structured tannins
After destemming the wine was fermented separately in two small lots using two different yeasts. After pressing the wine was matured for 18 months in neutral oak.
