This Cab Franc was matured for 18 months in 75% French and 25% American oak. 25% of the barrels were new oak and the balance was in 2-4 years old barriques. Bottled aged at the winery for over two years prior to release.

GSM is a classic combination of grapes used in reds from Rhône Valley. Vibrant aromas of cherry and dark plum with spicy floral notes. The palate yet powerful is delicate and round with attractive flavors of sweet berries, ripe plum and tart cherries. Long smooth finish, soft silky tannins with a touch of spice.
Whole cluster harvest and fermented separately in small lots. The varieties were matured separately for 16 months in new and neutral French and American oak prior to blending and bottling.
Blend: Merlot 27%, Cab Sauv, 27%, Malbec 10%, Cab Franc 9%, P. Sirah 8%, Mourvedre 8%, Tempranillo 7%, P. Verdot 2%, Grenache 2%

Each variety is hand-picked, hand sorted and barrel aged separately. During fermentation of each wine the bins were punched down 3 times a day to ensure maximum extraction of color and tannins. After dryness is reached the wines were then matured separately for 18 months in new and neutral French and American oak prior to blending and bottling.

Each variety is hand-picked, hand sorted and barrel aged separately. During fermentation of each wine the bins were punched down 3 times a day to ensure maximum extraction of color and tannins. After dryness is reached the wines were racked to a combination of French and American barrels ranging from new to two years old. With an average of 18 months in oak - the blending trials begin. The challenging, but enjoyable part, is finding the perfect blend using the barrel aged “penta” components.

Whole cluster harvest and fermented separately in small lots. Matured for 18 months in 100% French oak - 30% new oak, balance in 2-4 year old barrels.
Aroma: plum, fig and black cherry
Palate: savory with red berries, dark cherry and tart raspberries
About: dry silky tannin, medium/full bodied
This Syrah was fermented in 4 different batches, using 4 different hand selected yeast to enhance the wines complexity. Matured for 18 months in 70% French and 30% American oak. 30% of the barrels were new oak and the balance was in 2-4 years old barriques.
